Matcha Varieties

Matcha is described by two japanese terms, koicha and usucha.  These terms come from the chanoyu tea ceremony.  Koicha literally translates to “thick”, and usucha translates to “thin”.

Usucha is made from the leaves and stems of young plants, less than 30 years old.  Koicha is made from the plants older than 30 years.  Koicha is typically brewed with less water than Usucha.

Both teas are high in concentration of vitamins and catechins, because we are consuming the leaves and stems of the plant.

Matcha Green Tea Brands

Due to Matcha’s huge popularity, many companies have started to sell Matcha tea, and it is difficult to tell which brands are higher quality, and what regions each brand comes from.  The best Matcha comes from the Uji Tawara region of Japan.
